Longhorn cattle are often found on Wyoming ranches. Their longhorn is the Texas Longhorn, and is a beef animal. Known for its lean beef, which is lower in fat, cholesterol and calories than most beef, longhorns are desirable because of their easy calving and the calves are very tough after birth. They continue to represent the romance of the Old West and are often retained for their beauty and intelligence.
